Quick Teriyaki Salmon Bites with Steamed Rice

1 lb (450g) salmon fillet, skinless and boneless, cut into bite-sized cubes

1/4 cup teriyaki sauce, plus extra for drizzling

1 tablespoon olive oil

1 teaspoon sesame oil

2 cups cooked jasmine rice

1 tablespoon sesame seeds

2 green onions, finely sliced

1 medium carrot, julienned

1 cup broccoli florets

Salt and pepper to taste

Lime wedges for serving

Instructions
 

Marinate the Salmon: In a medium bowl, combine the cubed salmon and 1/4 cup of teriyaki sauce. Toss to coat and let the salmon marinate for at least 15 minutes while you prepare the rest of the meal.

    Prepare the Vegetables: In a steamer basket, arrange the carrot julienne and broccoli florets. Fill a pot with about an inch of water, bring it to a boil, then place the steamer basket over the pot, reducing the heat to a simmer. Cover and steam the vegetables for about 5-7 minutes, or until they are vibrant and tender but still crisp. Season with a pinch of salt and pepper.

      Cook the Salmon: In a large skillet over medium-high heat, add the olive oil and sesame oil. Once the oils are hot, remove the salmon from the marinade (reserving the marinade) and add the salmon cubes to the skillet. Cook for 2-3 minutes on each side, or until golden brown and cooked through.

        Add the Marinade: Pour the reserved teriyaki marinade into the skillet with the salmon. Cook for another 1-2 minutes, tossing to coat the salmon in the sauce, allowing it to thicken slightly.

          Assembly: Serve the teriyaki salmon bites over beds of fluffy jasmine rice, with the steamed vegetables on the side. Sprinkle sesame seeds and sliced green onions over the top for garnish. Drizzle extra teriyaki sauce if desired and serve with lime wedges on the side for a fresh zing.
