Quick Teriyaki Salmon Bowls with Rice

Ingredients
  

2 salmon fillets (about 6 oz each)

1/4 cup teriyaki sauce

1 cup jasmine rice

2 cups water or low-sodium chicken broth

1 tablespoon sesame oil

1 cup broccoli florets

1/2 cup sliced carrots

1/4 cup green onions, sliced

1 tablespoon sesame seeds

Salt and pepper, to taste

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add the rice, a pinch of salt, and reduce to a simmer. Cover and cook for about 15 minutes until the rice is fluffy and the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

    Marinate the Salmon: While the rice is cooking, place the salmon fillets in a shallow dish and pour the teriyaki sauce over them. Let them marinate for about 10-15 minutes to absorb the flavors.

      Cook the Vegetables: In a skillet, heat the sesame oil over medium heat. Add the broccoli and carrots, and sauté for about 5-7 minutes, or until they're tender but still crisp. Season with a pinch of salt and pepper. Remove from heat and set aside.

        Cook the Salmon: In the same skillet, push the vegetables to one side and add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes, then carefully flip and cook for another 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork. Brush with additional teriyaki sauce if desired.

          Assemble the Bowls: Fluff the rice with a fork and divide it into two bowls. Top each bowl with the sautéed vegetables, a salmon fillet, and garnish with sliced green onions and sesame seeds. Drizzle with extra teriyaki sauce if preferred.
