Ingredients

4 large whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small zucchini, diced

1/2 cup red onion, diced

1 tsp garlic powder

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil (optional)

Fresh cilantro, chopped (for garnish)

Salsa or guacamole (for serving)

Instructions

Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for about 3-5 minutes.

Prepare the Veggie Filling: In a large mixing bowl, combine the black beans, corn, diced bell pepper, zucchini, red onion, garlic powder, cumin, chili powder, salt, and pepper. Toss everything together until well mixed.

Assemble the Quesadillas: Lay out two of the tortillas on a flat surface. Evenly distribute half of the cheese over each tortilla. Spoon the veggie filling on top of the cheese, and then sprinkle the remaining cheese over the veggie filling. Top with the remaining tortillas to create two quesadillas.

Oil the Quesadillas: If using, lightly brush each quesadilla with olive oil on both sides. This will help them achieve a golden crispy texture.

Air Fry the Quesadillas: Place one quesadilla in the air fryer basket (you may need to cut them in half depending on the size of your air fryer). Cook for about 6-8 minutes, flipping halfway through, until the quesadilla is golden brown and the cheese has melted. Repeat with the second quesadilla.

Slice and Serve: Once cooked, remove the quesadillas from the air fryer and let them sit for a minute to cool slightly. Slice them into wedges, garnish with chopped cilantro, and serve with salsa or guacamole on the side.

Enjoy your Meal: Dive into the delicious, crispy, and veggie-packed quesadillas perfect for families!
