Quick Veggie-Packed Air Fryer Quesadillas for Families

Ingredients
  

4 large whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup mixed bell peppers, diced (red, green, yellow)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

1 teaspoon taco seasoning

1 tablespoon olive oil or cooking spray

Salt and pepper to taste

Optional: fresh cilantro, sour cream, or salsa for serving

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the diced bell peppers, black beans, corn, red onion, and taco seasoning. Season with salt and pepper to taste. Mix well until all ingredients are coated with seasoning.

    Assemble the Quesadillas: Place one tortilla on a flat surface. On half of the tortilla, sprinkle a generous amount of shredded cheese followed by a portion of the veggie mixture (about 1/2 cup). Fold the tortilla in half, pressing down gently to seal.

      Oil the Quesadillas: Lightly brush or spray the outside of the quesadilla with olive oil to help them crisp up in the air fryer.

        Preheat the Air Fryer: Preheat your air fryer to 380°F (190°C) for about 5 minutes.

          Cook the Quesadillas: Once preheated, place the quesadilla in the air fryer basket. Cook for 6-8 minutes, flipping halfway through, until golden brown and crispy on both sides. Depending on the size of your air fryer, you may need to cook in batches.

            Slice and Serve: Remove the quesadillas from the air fryer and let them cool for a minute. Cut into wedges and serve warm with fresh cilantro, sour cream, or salsa on the side.
