4 large whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 bell pepper, diced (any color)

1 small zucchini, grated

½ cup diced red onion

1 tsp cumin powder

1 tsp paprika

Salt and pepper to taste

Cooking spray or olive oil for the air fryer

Optional: salsa, sour cream, or guacamole for dipping

Prep the Veggies: In a large mixing bowl, combine the black beans, corn, bell pepper, zucchini, red onion, cumin, paprika, salt, and pepper. Mix everything together until well combined.

    Assemble the Quesadillas: Place one tortilla on a clean surface. Sprinkle a layer of cheese (about ¼ cup) over half of the tortilla. Top with a generous scoop of the veggie mixture, and then add another layer of cheese on top. Fold the tortilla in half to create a half-moon shape. Repeat this for the remaining tortillas.

      Preheat the Air Fryer: Preheat your air fryer according to the manufacturer’s instructions (usually around 350°F or 180°C).

        Prepare for Cooking: Lightly spray the outside of each folded quesadilla with cooking spray or brush with olive oil to ensure a crispy finish.
