4 whole wheat tortillas

1 cup shredded cheddar cheese (or your favorite cheese)

1 cup finely chopped vegetables (suggestions: bell peppers, spinach, zucchini, and corn)

1/2 cup black beans, drained and rinsed

1/4 cup salsa (mild for kids)

1 teaspoon garlic powder

1 teaspoon onion powder

Cooking spray or olive oil for brushing

Optional: sour cream or guacamole for dipping

Prep the Veggies: Finely chop your chosen vegetables to make them easier for kids to eat. You want a nice mix of colors to keep it visually appealing.

    Mix Filling: In a medium bowl, combine the chopped veggies, black beans, shredded cheese, salsa, garlic powder, and onion powder. Mix well until combined.

      Assemble Quesadillas: Place a tortilla flat on a clean surface. Spoon a generous amount of the veggie filling onto half of the tortilla, then fold it over to create a half-moon shape. Press gently to seal.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

          Air Fry Quesadillas: Lightly spray both sides of the folded quesadilla with cooking spray or brush with olive oil. Place 2 quesadillas in the air fryer basket (if your air fryer is small, do them in batches). Cook for 6-8 minutes, flipping halfway through, until golden brown and crispy.

            Serve: Once done, remove from the air fryer and let them cool for a minute. Cut each quesadilla into triangles and serve with sour cream or guacamole for dipping.
