Ingredients

4 large whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/2 cup cooked black beans (rinsed and drained)

1/2 cup finely chopped bell peppers (red, yellow, or green)

1/2 cup sweet corn (canned or frozen)

1/2 cup chopped spinach or kale

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

Cooking spray or olive oil for brushing

Optional toppings: salsa, guacamole, or Greek yogurt for dipping

Instructions

Preheat your air fryer: Set your air fryer to 375°F (190°C). Preheating helps achieve a crispy texture.

Prepare the filling: In a mixing bowl, combine the shredded cheese, black beans, chopped bell peppers, sweet corn, spinach or kale, cumin, garlic powder, salt, and pepper. Mix well until everything is evenly distributed.

Assemble the quesadillas: Lay one tortilla flat on a clean surface. Spoon a generous amount of the veggie filling onto the center of the tortilla, then fold it in half. Press down gently to seal. Repeat with the remaining tortillas and filling.

Coat the quesadillas: Brush the tops of each folded quesadilla lightly with cooking spray or olive oil. This helps them become golden and crispy in the air fryer.

Cook in the air fryer: Place the quesadillas in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches. Air fry for 6-8 minutes, flipping halfway through, until they are crispy and golden brown.

Slice and serve: Once done, carefully remove the quesadillas from the air fryer and let them cool slightly before slicing into wedges. Serve with salsa, guacamole, or Greek yogurt for dipping. Enjoy!
