4 large whole wheat tortillas

1 cup shredded cheese (cheddar or mozzarella)

1 cup mixed bell peppers, diced (red, yellow, green)

1 small zucchini, diced

1/2 cup corn (fresh, frozen, or canned)

1/2 cup black beans, rinsed and drained

1 teaspoon taco seasoning (optional, for extra flavor)

Olive oil spray

Salsa or guacamole (for dipping)

Instructions
 

Prepare the Veggies: In a mixing bowl, combine the diced bell peppers, zucchini, corn, and black beans. If you’re using taco seasoning, sprinkle it over the veggies and mix well.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. On each tortilla, sprinkle half of the shredded cheese evenly. Top with half of the veggie mixture, and then sprinkle the remaining cheese over the veggies. Finally, place the other two tortillas on top to create two stacked quesadillas.

      Preheat the Air Fryer: Set the air fryer to 375°F (190°C) and preheat for about 5 minutes.

        Air Fry the Quesadillas: Lightly spray the air fryer basket with olive oil spray. Carefully place one quesadilla in the basket. Spray the top of the quesadilla lightly with olive oil to help it crisp up. Air fry for about 6-8 minutes, flipping halfway through. The quesadilla should be golden brown and crispy when it's done.

          Cut and Serve: Once cooked, remove the quesadilla from the air fryer and let it cool for a minute. Cut it into wedges using a pizza cutter. Repeat the process with the second quesadilla.

            Dipping Time: Serve the wedges with salsa or guacamole on the side for dipping. Enjoy!
