4 large flour tortillas

1 cup shredded cheese (cheddar or Monterey Jack)

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 medium bell pepper, diced (any color)

1 medium zucchini, diced

1 small red onion, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper, to taste

Optional toppings: salsa, sour cream, guacamole, or fresh cilantro

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until the onion is translucent (about 3-4 minutes). Then, add the diced zucchini and cook for another 2-3 minutes until slightly soft.

    Add the Beans and Corn: Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat and set aside.

      Assemble the Quesadillas: Lay out two tortillas on a flat surface. Evenly distribute the veggie mix over each tortilla, then sprinkle the shredded cheese on top. Place a second tortilla on top of each.

        Cook the Quesadillas: In the same skillet (or a clean one), heat over medium heat. Cook one quesadilla at a time for about 3-4 minutes per side, or until the tortillas are golden brown and the cheese is melted. Use a large spatula to flip the quesadillas carefully.

          Serve: Remove from the skillet and cut each quesadilla into wedges. Serve hot with optional toppings like salsa, sour cream, guacamole, or fresh cilantro.
