1 rack of lamb (about 1-1.5 pounds, frenched)

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

2 teaspoons fresh rosemary, finely chopped

2 teaspoons fresh thyme, finely chopped

1 red bell pepper, roasted, skin removed and chopped

2 cloves garlic, minced

1 cup unsalted butter (2 sticks), softened

1 tablespoon lemon juice

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Lamb: Preheat your oven to 400°F (200°C). Pat the rack of lamb dry with paper towels, then season generously with salt and pepper. Rub the olive oil all over the meat, followed by the fresh rosemary and thyme.

    Sear the Lamb: Heat a large oven-safe skillet over medium-high heat. Once hot, add the lamb rack, fat side down, and sear for about 3-4 minutes until nicely browned. Turn to sear the other side for another 2-3 minutes.

      Roast the Lamb: Transfer the skillet to the preheated oven. Roast for approximately 15-20 minutes for medium-rare (130°F internal temperature). Adjust time according to your desired doneness. Once done, remove from the oven and let it rest covered loosely with foil for at least 10 minutes.

        Make Red Bell Pepper Butter Sauce: In a medium bowl, combine the softened butter, roasted red bell pepper, minced garlic, lemon juice, smoked paprika, cayenne pepper (if using), salt, and pepper. Mash together using a fork until smooth and well combined. Taste and adjust seasoning as necessary.

          Serve: Slice the rack of lamb between the bones into individual chops. Arrange the chops on a serving platter. Dollop generous portions of the red bell pepper butter sauce over the lamb. Garnish with chopped fresh parsley.
