Ingredients

1 cup (2 sticks) unsalted butter, melted

1 1/4 cups packed light brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup white chocolate chips

1 cup fresh raspberries (or frozen, thawed and drained)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter, light brown sugar, and granulated sugar. Whisk until the mixture is smooth and creamy. Add the eggs one at a time, whisking vigorously after each addition. Stir in the vanilla extract.

Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, using a spatula or wooden spoon to fold it together. Be careful not to overmix, as this could make the blondies tough.

Fold in Add-ins: Gently fold in the white chocolate chips and raspberries, ensuring they are evenly distributed throughout the batter. If using fresh raspberries, be cautious to avoid breaking them too much.

Pour and Spread: Pour the batter into the prepared baking pan. Use a spatula to spread it out evenly. The batter will be thick, so take your time to smooth it into the corners.

Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Cut: Once baked, remove the blondies from the oven and let them cool in the pan for about 10-15 minutes. Then, lift them out using the parchment paper (if used) and transfer them to a wire rack to cool completely. Once cool, cut into squares.

Serve: Enjoy your Raspberry White Chocolate Blondies warm or at room temperature. They pair beautifully with a scoop of vanilla ice cream or a hot cup of coffee!
