2 medium carrots, diced

2 stalks celery, diced

1 medium red bell pepper, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

1 can (14.5 oz) diced tomatoes, with juices

4 cups vegetable or chicken broth

1 cup heavy cream

1 can (15 oz) cannellini beans, drained and rinsed

2 cups fresh spinach (or kale)

1/2 cup grated Parmesan cheese, plus more for serving

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

    Add Vegetables: Add the diced carrots, celery, and red bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

      Season: Sprinkle in the dried oregano, dried basil, and red pepper flakes, stirring well to combine. Cook for another minute to let the spices bloom.
