Roast Leg of Lamb with Mint Sauce

1 leg of lamb (about 4-5 pounds), bone-in

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

1 cup beef or lamb broth

1/2 cup red wine (optional)

For the Mint Sauce:

1 cup fresh mint leaves, finely chopped

1/4 cup sugar

1/2 cup boiling water

1/4 cup apple cider vinegar

Salt, to taste

Instructions
 

Preparation of Lamb:

    - Preheat your oven to 425°F (220°C).

      - In a small bowl, mix minced garlic, chopped rosemary, thyme, Dijon mustard, olive oil, salt, and pepper to create a herb paste.

        - Rub the herb paste all over the leg of lamb, ensuring an even coating.

          Searing the Lamb:

            - In a large roasting pan, heat a bit of oil over medium-high heat on the stove. Sear the lamb on all sides until browned (about 5 minutes per side).

              Roasting:

                - Remove the lamb from the heat. If using, pour the red wine and broth into the roasting pan.

                  - Transfer the roasting pan into the preheated oven. Roast for about 25 minutes for medium-rare, or adjust according to your preference (about 15 minutes per pound for medium-rare). Baste the lamb with the pan juices halfway through.

                    Resting the Lamb:

                      - Once done, remove the lamb from the oven and cover it loosely with aluminum foil. Let it rest for at least 15-20 minutes before carving.

                        Preparing Mint Sauce:

                          - While the lamb is resting, prepare the mint sauce. In a bowl, combine finely chopped mint leaves and sugar. Pour in boiling water and stir until dissolved.

                            - Add apple cider vinegar and a pinch of salt. Mix well and let it sit at room temperature.
