2 medium-sized beets, peeled and cubed

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 flatbread (store-bought or homemade)

1 cup crumbled feta cheese

1 tablespoon honey

1 tablespoon balsamic glaze

2 cups arugula or mixed greens

Zest of 1 lemon

Fresh chives or dill for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Beets: In a mixing bowl, toss the cubed beets with olive oil, salt, pepper, and fresh thyme. Spread the beets in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.

      Prepare the Flatbread: While the beets are roasting, place the flatbread on another baking sheet. Optional: Brush the flatbread lightly with olive oil for added flavor and crispness.

        Add Toppings: Once the beets are done, remove them from the oven. On the flatbread, evenly distribute the roasted beets and crumble the feta cheese on top.

          Bake the Flatbread: Transfer the topped flatbread back into the oven and bake for an additional 10-12 minutes, or until the feta is slightly warmed and the edges of the flatbread are golden.
