1 large head of cauliflower, cut into florets

1 whole head of garlic

2 tablespoons olive oil

1 medium onion, chopped

4 cups vegetable broth

1 cup sharp cheddar cheese, shredded

1 cup milk (or plant-based milk)

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Optional: Fresh chives or parsley for garnish

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the whole head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft and caramelized.

    Prepare the Cauliflower: While the garlic is roasting, toss the cauliflower florets in olive oil, salt, and pepper. Spread them on a baking sheet and roast in the same oven for about 25 minutes, or until golden and tender.

      Sauté the Onion: In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.

        Combine Ingredients: Once the garlic is roasted, squeeze the cloves out of their skins into the pot with the onions. Add the roasted cauliflower, vegetable broth, and thyme. Bring to a simmer and let it cook for about 10 minutes.

          Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy. (Alternatively, you can transfer it in batches to a blender.)

            Add Cheese and Milk: Return the blended soup to low heat. Stir in the shredded cheddar cheese and milk until the cheese is melted and the soup is creamy. Adjust seasoning with additional salt and pepper if needed.
