1 whole head of garlic

1 stick (1/2 cup) unsalted butter, softened

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon lemon zest

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: a pinch of red pepper flakes for heat

Roast the Garlic: Preheat your oven to 400°F (200°C). Take a whole head of garlic and slice the top off to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Place it in the oven and roast for 30-35 minutes, until the cloves are soft and caramelized. Let it cool, then squeeze the roasted garlic into a bowl and mash it with a fork.

    Prepare the Herbed Butter: In a mixing bowl, combine the softened butter, roasted garlic, chopped rosemary, thyme, parsley, lemon zest, salt, black pepper, and red pepper flakes (if using). Mix thoroughly with a fork or spatula until all ingredients are well incorporated and the mixture is creamy.

      Shape and Chill: Transfer the herbed garlic butter mixture onto a sheet of parchment paper. Roll it up into a log shape, twisting the ends to seal, like you would with candy. Chill in the refrigerator for at least 1 hour (or overnight if you prefer a firmer texture).
