2 pounds Yukon Gold potatoes, peeled and quartered

1 whole head of garlic

4 tablespoons unsalted butter

1 cup heavy cream

1 cup white cheddar cheese, grated

Salt, to taste

Freshly ground black pepper, to taste

Fresh chives, finely chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized. Remove from the oven and allow to cool slightly. Squeeze the roasted garlic cloves out of their skins into a bowl and set aside.

    Boil the Potatoes: While the garlic is roasting, place the peeled and quartered Yukon Gold potatoes in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until the potatoes are fork-tender.

      Drain and Mash: Once the potatoes are cooked, drain them well and return them to the pot. Add the roasted garlic, unsalted butter, and heavy cream. Using a potato masher or a ricer, mash the potatoes until smooth and creamy.

        Incorporate Cheese: Stir in the grated white cheddar cheese until fully melted and combined. Adjust the seasoning with more salt and freshly ground black pepper to taste.

          Serve: Transfer the mashed potatoes to a serving bowl. If desired, drizzle with a little extra melted butter and sprinkle with chopped chives for a fresh touch.
