1 pound fresh strawberries, hulled and halved

3 tablespoons balsamic vinegar

1/2 cup granulated sugar, divided

1 1/2 cups heavy cream

1 cup whole milk

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Optional: Crushed pistachios or dark chocolate shavings for topping

Instructions
 

Roast the Strawberries:

    - Preheat your oven to 400°F (200°C).

      - Place the halved strawberries in a baking dish. Drizzle with balsamic vinegar and sprinkle with 2 tablespoons of the sugar.

        - Toss gently to combine, then roast in the oven for about 25-30 minutes, or until the strawberries are tender and caramelized. Stir halfway through to ensure even roasting. Once done, let them cool slightly.

          Blend the Strawberries:

            - Transfer the roasted strawberries along with their juices into a blender or food processor. Blend until smooth, leaving some small chunks for texture if desired. Set aside to cool completely.

              Prepare the Ice Cream Base:

                - In a mixing bowl, whisk together the remaining 1/4 cup of sugar, heavy cream, whole milk, vanilla extract, and sea salt until the sugar is dissolved.

                  Combine and Chill:

                    - Gently fold the blended roasted strawberries into the cream mixture until combined. Taste and adjust sweetness if necessary.

                      - Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.

                        Churn the Ice Cream:

                          - Pour the chilled strawberry mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, or until it reaches a soft-serve consistency.

                            Freeze to Firm:
