Preheating the oven is a crucial step in ensuring that your vegetables roast evenly and develop that delicious caramelization we all love. When you preheat the oven to the appropriate temperature, it allows the tomatoes to start cooking immediately upon entering, preventing them from becoming soggy. Ideally, set your oven to 425°F (220°C) before you begin prepping the ingredients. This temperature is high enough to promote proper roasting without drying out the tomatoes, ensuring they become tender and flavorful.

Ingredients

1 pint of cherry or grape tomatoes

1 tablespoon olive oil

Salt and pepper, to taste

1 can (15 ounces) of white beans (cannellini or great northern), drained and rinsed

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional, for heat)

4 slices of rustic bread (such as sourdough or whole grain)

Fresh basil leaves, for garnish

Additional olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes:

      - In a mixing bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper until well-coated.

        - Spread the tomatoes evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are blistered and caramelized.

          Prepare the White Bean Mixture:

            - While the tomatoes are roasting, prepare the white bean mixture. In a medium bowl, combine the drained white beans, lemon juice, minced garlic, thyme leaves, red pepper flakes (if using), and a pinch of salt and pepper.

              - Use a fork to mash the beans lightly, leaving some whole for texture. Mix until everything is well incorporated.

                Toast the Bread:

                  - While the tomatoes are finishing up, heat a grill pan or skillet over medium heat.

                    - Toast the slices of bread on both sides until golden brown and crispy. If preferred, you can also bake them in the oven for about 5-7 minutes.

                      Assemble the Toast:

                        - Once the bread is toasted, spread a generous layer of the white bean mixture on each slice.

                          - Top each slice with the roasted tomatoes, allowing some of the juices to soak into the bread for added flavor.

                            Garnish and Serve:

                              - Drizzle a little extra olive oil on top, and garnish with fresh basil leaves.

                                - Serve immediately, enjoying the delightful blend of flavors and the satisfying crunch of the toast!
