2 lbs ripe tomatoes, halved

1 large onion, chopped

4 cloves garlic, unpeeled

2 tablespoons olive oil

Salt and freshly ground black pepper to taste

1 teaspoon dried oregano

4 cups vegetable broth (or chicken broth)

1 cup fresh basil leaves, plus extra for garnish

1 tablespoon balsamic vinegar (optional)

½ cup heavy cream or coconut milk (for a vegan option)

Instructions
 

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    Prepare the tomatoes: Lay the halved tomatoes on the baking sheet, cut side up. Scatter the chopped onion and unpeeled garlic cloves around the tomatoes. Drizzle everything with olive oil and season with salt, pepper, and dried oregano.

      Roast the vegetables: Place the baking sheet in the preheated oven and roast for about 30-35 minutes, or until the tomatoes are caramelized and the onion is tender.

        Squeeze garlic: Once roasted, remove the baking sheet from the oven. Carefully squeeze the garlic cloves out of their skins into a pot, discarding the skins. Add the roasted tomatoes and onion to the pot.

          Add broth: Pour in the vegetable (or chicken) broth, and stir in the fresh basil leaves. Bring the mixture to a simmer over medium heat. Let it simmer for about 10-15 minutes to meld the flavors.

            Blend the soup: Use an immersion blender to puree the soup until smooth. If unavailable, transfer to a blender in batches (be careful with the hot contents).

              Add cream: Once blended, return the soup to low heat and stir in the heavy cream or coconut milk. Taste and adjust seasoning as needed, adding balsamic vinegar for a touch of acidity if desired.

                Serve: Ladle the soup into bowls, garnishing with additional fresh basil leaves and a drizzle of olive oil for extra flavor.
