Rosemary Garlic Steak Kebabs

1.5 pounds of sirloin steak, cut into 1-inch cubes

4 tablespoons fresh rosemary, finely chopped

4 cloves garlic, minced

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Steak: In a mixing bowl, combine the chopped rosemary, minced garlic, olive oil, balsamic vinegar, salt, and black pepper. Whisk together until well mixed. Add in the cubed steak and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to 4 hours for more intense flavor).

    Prepare the Veggies: While the steak marinates, prepare your vegetables. Cut the red and yellow bell peppers into 1-inch pieces and cut the red onion into wedges.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C).

        Assemble the Kebabs: Thread the marinated steak cubes onto the skewers, alternating with pieces of red pepper, yellow pepper, and onion. Keep some space between each piece for even cooking.

          Grill the Kebabs: Once the grill is ready, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the steak reaches your desired level of doneness (medium-rare around 130°F / 54°C, medium around 140°F / 60°C). The vegetables should be slightly charred but still crisp.
