2 cups cooked chicken, shredded (can be rotisserie chicken)

1 cup chicken broth

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups mixed vegetables (carrots, peas, and corn)

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup milk

1/4 cup shredded Parmesan cheese

1 teaspoon garlic powder

1 tablespoon fresh chives, chopped (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add Vegetables and Chicken: Add the mixed vegetables, shredded chicken, chicken broth, thyme, rosemary, oregano, salt, and pepper to the skillet. Stir to combine and let simmer for about 5 minutes, allowing the flavors to meld. Remove from heat.

        Prepare the Biscuit Topping: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
