Salmon Lettuce Wraps with Watermelon Glaze

Ingredients
  

1 pound salmon fillet, skin removed

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup diced watermelon

2 tablespoons honey

1 tablespoon lime juice

1 tablespoon soy sauce

8 large lettuce leaves (such as butter or romaine)

1 avocado, sliced

Fresh cilantro, for garnish

Sliced radishes, for garnish (optional)

Instructions
 

Prepare the Watermelon Glaze:

    In a blender, combine the diced watermelon, honey, lime juice, and soy sauce. Blend until smooth. Pour the mixture into a small saucepan and bring it to a simmer over medium heat. Cook for about 10-15 minutes or until it thickens slightly. Stir occasionally. Once thickened, remove from heat and set aside.

      Cook the Salmon:

        Preheat your grill or stovetop grill pan to medium-high heat. Brush the salmon fillet with olive oil, and season with salt, pepper, garlic powder, and smoked paprika on both sides. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork and is cooked through.

          Assemble the Wraps:

            Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes. While the salmon is resting, take your lettuce leaves and lay them flat on a serving plate.

              Flake the Salmon:

                Using a fork, gently flake the salmon into bite-sized pieces. Distribute the flaked salmon evenly among the lettuce leaves.
