Salmon Pasta in Lemon Garlic Cream Sauce

8 oz. linguine or spaghetti

1 lb. salmon fillet, skin-on

4 cloves garlic, minced

1 cup heavy cream

1 lemon, zested and juiced

2 tbsp olive oil

1 tbsp butter

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Lemon slices, for garnish (optional)

Instructions
 

Cook the Pasta: Start by boiling a large pot of salted water. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Salmon: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the salmon fillet with salt and pepper on both sides. Place the salmon skin-side down in the skillet and cook for about 5-6 minutes, or until the skin is crispy.

      Flip the Salmon: Carefully flip the salmon fillet and add the butter and minced garlic to the skillet. Cook for an additional 4-5 minutes until the salmon is just cooked through and flakes easily with a fork. Transfer the salmon to a plate and cover with foil to keep warm.

        Make the Sauce: In the same skillet, reduce the heat to low. Pour in the heavy cream, add the lemon juice and zest, and stir to combine. Let it simmer gently for 2-3 minutes, allowing the flavors to meld.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce in the skillet, tossing to coat. If the mixture looks too thick, gradually add reserved pasta water, a few tablespoons at a time, until you achieve your desired consistency.

            Finishing Touches: Flake the cooked salmon into bite-sized pieces and gently fold it into the pasta mixture. Add grated Parmesan cheese and stir until melted. Taste and adjust seasoning with more salt and pepper if needed.
