Santa Fe Chicken Foil Packets

1 lb boneless, skinless chicken breasts

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 bell pepper, diced (any color)

1 small red onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 avocado, sliced (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). If you prefer grilling, preheat your grill to medium-high heat.

    Prepare the Foil: Tear off 4 large sheets of aluminum foil, approximately 12 inches long each. Lay them out on a flat surface.

      Season the Chicken: In a bowl, combine the olive oil, chili powder, cumin, paprika, salt, and pepper. Toss the chicken breasts in the mixture until they are well coated.

        Assemble the Packets:

          - Place one chicken breast in the center of each foil sheet.

            - Distribute the black beans, corn, diced bell pepper, red onion, minced garlic, and diced tomatoes evenly on top of the chicken pieces.

              Wrap the Packets: Fold the sides of the foil over the chicken and vegetable mixture, sealing them tightly at the top and ensuring no steam escapes.

                Cook the Packets:

                  - Oven Method: Place the foil packets on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).

                    - Grill Method: Place the packets on the grill grates and cook for about 20-25 minutes, flipping halfway through.

                      Add Cheese: Carefully open the foil packets (be cautious of steam) and sprinkle shredded cheddar cheese on top of each chicken breast. Reseal and allow the cheese to melt for 5 minutes.

                        Serve: Once cooked, remove the packets from the oven/grill. Open them up carefully and serve topped with avocado slices and fresh cilantro. Squeeze lime juice over the top to brighten the flavors.
