1 cup cooked brown rice or quinoa

1 can (15 oz) black beans, rinsed and drained

1 bell pepper (any color), diced

1 small red onion, diced

1 cup corn (canned or frozen)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1 avocado, diced

1 cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Base: Start by cooking your brown rice or quinoa according to package instructions. Set aside once done.

    Mix the Filling: In a large bowl, combine the rinsed black beans, diced bell pepper, red onion, corn, chili powder, cumin, garlic powder, paprika, and olive oil. Season with salt and pepper to taste. Toss everything together until well coated.
