Ingredients
  

1 whole chicken (about 4-5 pounds)

1/4 cup olive oil

1 tablespoon salt

1 teaspoon black pepper

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

6 cloves garlic, minced

1 lemon, zested and juiced

1 cup chicken broth

1 onion, quartered

2 carrots, chopped

2 celery stalks, chopped

Instructions
 

Preheat your oven to 425°F (220°C).

    In a bowl, mix together the olive oil, salt, black pepper, chopped rosemary, thyme, parsley, minced garlic, lemon zest, and lemon juice to create a marinade.

      Pat the chicken dry with paper towels. Gently loosen the skin on the breast and thighs using your fingers or a spatula, being careful not to tear it.

        Carefully rub half of the marinade directly under the skin, distributing it evenly. Then rub the remaining marinade all over the outside of the chicken.

          In a roasting pan, arrange the onion, carrots, and celery at the bottom. Place the chicken on top of the vegetables, breast-side up. Pour the chicken broth into the pan.

            Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chicken with the drippings every 30 minutes for added flavor and moisture.

              Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This helps retain the juices for a moist chicken.
