Savory Ground Beef and Potato Pie

1 lb ground beef

2 large potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 tsp Worcestershire sauce

1 tsp dried thyme

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 sheet of ready-made pie crust (or 2 if you want a top and bottom)

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Begin by peeling and dicing the potatoes into small cubes. Chop the onion and mince the garlic.

    Cook the Beef Mixture: In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes. Add the ground beef and cook, breaking it apart, until browned, approximately 5-7 minutes. Drain any excess fat.

      Add Vegetables and Seasoning: Stir in the diced potatoes, frozen peas and carrots mix, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix well and cover the skillet. Allow to cook for about 15 minutes, stirring occasionally, until the potatoes are tender and the mixture is well combined.

        Preheat the Oven: While the filling is cooking, preheat your oven to 400°F (200°C).

          Assemble the Pie: Roll out one pie crust and fit it into a 9-inch pie dish. Pour the beef and potato mixture into the crust, spreading it evenly. If you desire a top crust, roll out another pie crust and carefully place it over the filling. Seal the edges by crimping them with your fingers or a fork. Cut a few slits in the top crust to allow steam to escape.

            Egg Wash: Brush the top crust with the beaten egg to give it a golden finish.

              Bake the Pie: Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and flaky.

                Cool and Serve: Once baked, remove the pie from the oven and let it cool for about 10 minutes. Garnish with fresh parsley before slicing and serving.
