Savory Mushroom & Brie Toast Melts

Ingredients
  

8 oz (225g) mixed mushrooms (cremini, shiitake, and button), cleaned and sliced

2 tbsp olive oil

2 cloves garlic, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper, to taste

1 cup (approx. 100g) Brie cheese, sliced

4 slices of rustic bread (such as sourdough or ciabatta)

2 tbsp butter, softened

2 tbsp fresh parsley, chopped (for garnish)

Balsamic glaze (optional, for drizzling)

Instructions
 

Sauté the mushrooms: In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and any moisture has evaporated.

    Add garlic and thyme: Stir in the minced garlic and fresh thyme, cooking for an additional 1-2 minutes until fragrant. Season with salt and pepper to taste. Remove from heat and set aside.

      Prepare the bread: Preheat your oven broiler. While it preheats, spread softened butter on one side of each slice of bread.

        Assemble the toast: Place the bread slices, buttered side up, on a baking sheet. Layer the sautéed mushroom mixture evenly on top of the bread slices followed by generous slices of Brie cheese.

          Broil the melts: Place the baking sheet under the broiler, keeping a close watch, and broil for 2-4 minutes or until the cheese is melted and slightly bubbly. The edges of the bread should also become crisp and golden.

            Garnish and serve: Remove from the oven, garnish with freshly chopped parsley, and drizzle with balsamic glaze if desired. Serve immediately while hot and melty.
