Ingredients

1 sheet of puff pastry (thawed)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup cream cheese, softened

1 egg (for egg wash)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon paprika

Sesame seeds (optional, for garnish)

Instructions

Prepare the Spinach Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Add Spinach: Add the chopped spinach to the skillet and cook until wilted, stirring occasionally (about 3 minutes). Remove from heat and let it cool slightly.

Mix Filling Ingredients: In a bowl, combine the cooled spinach mixture with crumbled feta cheese, softened cream cheese, oregano, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Prepare Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the pastry into squares (approximately 4x4 inches).

Fill the Pastries: Place a generous tablespoon of the spinach and feta mixture in the center of each pastry square. Be careful not to overfill.

Seal Pastries: Fold each square diagonally to create a triangle and seal the edges by pressing with a fork. This will help ensure that the filling stays inside while baking.

Egg Wash: Beat the egg in a small bowl and brush the egg wash over the top of each pastry for a golden finish. If desired, sprinkle sesame seeds on top for added texture.

Bake the Pastries: Arrange the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.

Serve Hot: Allow the pastries to cool slightly before serving. Enjoy these delightful bites warm as an appetizer or snack!
