2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup Gorgonzola cheese, crumbled

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (for garnish)

12 oz fettuccine pasta

Freshly cracked black pepper, for serving

Prepare the Pasta: Bring a large pot of salted water to a boil. Add in the fettuccine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Cook the Steaks: While the pasta is cooking, season the ribeye steaks generously with salt and pepper on both sides. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the skillet and let them rest for at least 5 minutes before slicing.

      Prepare the Sauce: In the same skillet used for cooking the steaks, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then, slowly pour in the heavy cream and stir, scraping up any browned bits from the bottom of the skillet.

        Add the Cheeses: Gradually stir in the Gorgonzola cheese and Parmesan cheese until melted and well combined. If the sauce becomes too thick, add some reserved pasta water to reach the desired consistency.

          Season and Combine: Add the Italian seasoning and stir to incorporate. Then, add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. If necessary, add more pasta water as needed for a creamy texture.
