1 pound ground turkey

1 cup cooked quinoa

1/2 cup diced onion

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1/2 cup black olives, sliced

1 teaspoon dried oregano

1/2 teaspoon paprika

1/4 teaspoon red pepper flakes (optional for heat)

1/2 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped (for garnish)

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded mozzarella cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides of the peppers with olive oil and set them aside in a baking dish.

      Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft. Then add the minced garlic and cook for an additional minute until fragrant.

        Add Ground Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 7-10 minutes.

          Mix in Vegetables: Stir in the diced tomatoes, cooked quinoa, sliced olives, oregano, paprika, and red pepper flakes (if using). Season with salt and pepper to taste. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.

            Incorporate Feta Cheese: Remove the skillet from heat and gently fold in the crumbled feta cheese.

              Stuff the Peppers: Fill each prepared bell pepper with the turkey mixture, packing it down gently. Top each stuffed pepper with shredded mozzarella cheese.

                Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
