Savory Sweet Potato and Turkey Skillet

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 lb ground turkey

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, roughly chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: avocado slices and lime wedges for serving

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with a pinch of salt, and sauté for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove them from the skillet and set aside.

    Brown the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, cooking until softened, about 3-4 minutes. Then, add the ground turkey, breaking it up with a spoon. Cook until browned and no longer pink, approximately 5-7 minutes. Drain any excess fat, if necessary.

      Add Aromatics: Stir in the minced garlic, cumin, smoked paprika, chili powder, and a pinch of salt and pepper. Cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet. Stir well to mix all the ingredients, allowing everything to cook together for another 2-3 minutes.

          Incorporate Spinach: Gently fold in the chopped spinach. Cook for an additional minute until the spinach wilts down.

            Finalize and Serve: Taste and adjust seasoning if needed. Garnish with freshly chopped parsley. For an extra touch, top with avocado slices and serve with lime wedges on the side for a burst of freshness.
