Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup diced tomatoes (canned or fresh)

1 cup shredded mozzarella cheese

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil. Place them in a baking dish and set aside.

      Cook the Filling: In a large skillet, heat the teaspoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

        Add the Turkey: Increase the heat to medium-high, then add the ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spatula, about 6-8 minutes.

          Mix in Spinach and Seasonings: Stir in the chopped spinach, Italian seasoning, smoked paprika, salt, and black pepper. Cook until the spinach has wilted, about 2-3 minutes.

            Combine Filling Ingredients: In a mixing bowl, combine the cooked turkey and spinach mixture with the cooked quinoa and diced tomatoes. Mix thoroughly until all ingredients are well incorporated.

              Stuff the Peppers: Spoon the turkey and spinach filling into each bell pepper. Fill generously, pressing down lightly to pack the filling.

                Top with Cheese: Sprinkle the shredded mozzarella cheese on top of each stuffed pepper.

                  Bake the Peppers: Cover the baking dish with aluminum foil and place in the preheated oven. Bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and lightly golden.

                    Garnish and Serve: Remove from the oven and allow to cool for a few minutes before serving. Garnish with fresh parsley if desired.
