Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Prepare the Shrimp: In a mixing bowl, combine the shrimp, 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, dried oregano, salt, and pepper. Mix well to ensure that the shrimp are evenly coated in the marinade. Let it sit for about 10-15 minutes to absorb the flavors.

Prepare the Asparagus: While the shrimp marinates, in another bowl, toss the asparagus pieces with the remaining 2 tablespoons of olive oil, salt, and pepper to taste. Ensure the asparagus is well coated.

Arrange on Sheet Pan: Spread the marinated shrimp evenly on one side of the prepared baking sheet. Next, arrange the seasoned asparagus on the other side. This makes it easy to roast both together.

Bake: Place the sheet pan in the oven and bake for 10-12 minutes, or until the shrimp are pink and opaque, and the asparagus is tender yet still crisp.

Garnish and Serve: Once cooked, remove the sheet pan from the oven. Garnish with freshly chopped parsley and serve immediately with lemon wedges on the side for an extra zesty punch.

Enjoy your meal! This dish pairs well with warm crusty bread or over a bed of rice for a complete dinner.
