Sheet Pan Lemon Herb Tilapia with Veggies

4 tilapia fillets

2 cups cherry tomatoes, halved

1 zucchini, sliced into half-moons

1 bell pepper (red or yellow), sliced

1 cup asparagus, trimmed and cut into 2-inch pieces

4 tablespoons olive oil

Juice of 2 lemons (zest reserved)

2 teaspoons dried Italian herbs (or use fresh herbs like basil, oregano, and thyme)

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, lemon zest, dried herbs, garlic powder, salt, and pepper. Taste and adjust seasoning if necessary.

      Prepare the Vegetables: On a large sheet pan, arrange the cherry tomatoes, zucchini, bell pepper, and asparagus. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper. Toss to coat the veggies evenly.

        Add the Tilapia: Push the vegetables to the edges of the pan to create space in the center. Place the tilapia fillets in the center and pour the lemon-herb marinade over them, ensuring they are well coated.

          Bake: Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the tilapia flakes easily with a fork and the vegetables are tender.

            Garnish and Serve: Remove from the oven and sprinkle with chopped fresh parsley. Serve immediately with your favorite side dish or over a bed of quinoa for a wholesome meal.
