Shrimp Skewers with Pineapple Salsa

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

8-10 skewers (soaked in water if wooden)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for spice)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to ensure all shrimp are coated. Cover and marinate for at least 20-30 minutes in the refrigerator.

    Prepare the Pineapple Salsa: In a separate bowl, mix together the diced pineapple, red bell pepper, red onion, jalapeño (if using), chopped cilantro, lime juice, and a pinch of salt. Stir gently to combine all ingredients. Set aside to let the flavors meld while you prepare the skewers.
