Ingredients

For the Shrimp Marinade:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons lime juice (about 1 lime)

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and black pepper to taste

For the Cabbage Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon apple cider vinegar

1 tablespoon honey or agave syrup

Salt and black pepper to taste

For Assembly:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges, for serving

Hot sauce (optional), for serving

Instructions

Marinate the Shrimp: In a medium bowl, combine the olive oil, lime juice, chili powder, paprika, cumin, garlic powder, salt, and pepper. Add the shrimp and toss until well-coated. Let it marinate in the refrigerator for at least 15 minutes.

Prepare the Cabbage Slaw: In a large bowl, mix the green cabbage, red cabbage, grated carrot, and cilantro. In a small bowl, whisk together the lime juice, apple cider vinegar, honey (or agave), salt, and pepper. Pour the dressing over the cabbage mixture and toss until all ingredients are evenly coated. Set aside to let the flavors meld.

Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on one side until they turn pink and slightly charred, then flip and cook for an additional 1-2 minutes until fully cooked.

Warm the Tortillas: In a separate dry skillet or directly over an open flame, warm the tortillas for about 30 seconds on each side until pliable and lightly charred.

Assemble the Tacos: Place a few shrimp on each tortilla, top with a generous scoop of cabbage slaw, and add slices of avocado. Drizzle with hot sauce if desired.

Serve: Squeeze fresh lime juice over the tacos for an extra burst of flavor. Enjoy with additional lime wedges and your favorite drinks!
