8 oz rice noodles

1 can (14 oz) coconut milk

1 cup vegetable broth

2 tablespoons red curry paste

1 tablespoon soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice

1 tablespoon vegetable oil

1 bell pepper (sliced thin)

1 cup snap peas

1 cup shiitake mushrooms (sliced)

2 green onions (chopped)

Fresh cilantro (for garnish)

Red chili flakes (optional for heat)

Cook the Noodles: In a pot of boiling water, cook the rice noodles according to package instructions until al dente. Drain and set aside.
