1 cup grated zucchini (about 1 medium zucchini)

1 cup grated carrots (about 2 medium carrots)

½ cup corn kernels (fresh or frozen)

½ cup breadcrumbs (whole wheat or gluten-free)

¼ cup grated Parmesan cheese (optional)

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Olive oil spray

Prep the Veggies: Start by grating the zucchini and carrots. After grating, squeeze out excess moisture from the zucchini using a clean kitchen towel. This helps keep the fritters from being too soggy.

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, grated carrots, corn kernels, breadcrumbs, Parmesan cheese (if using), egg, garlic powder, onion powder, paprika, salt, and pepper. Mix everything until well combined.

      Form Fritters: Using your hands, take about 2 tablespoons of the mixture and shape it into small patties (fritters). Place them on a plate or tray as you shape them.

        Preheat the Air Fryer: While you're forming the fritters, preheat your air fryer to 375°F (190°C) for about 5 minutes.
