2 lbs fresh figs, rinsed and stems removed

1 cup granulated sugar

2 tbsp lemon juice (freshly squeezed)

1/2 tsp vanilla extract

1/4 tsp ground cinnamon (optional)

1/4 cup water

Instructions
 

Prepare the Figs: Cut the figs into quarters and place them into a large pot. If you prefer a smoother jam, mash them slightly with a potato masher or fork.

    Combine Ingredients: Add the sugar, lemon juice, vanilla extract, and optional cinnamon to the pot with the figs. Stir to combine all the ingredients thoroughly.

      Cook the Mixture: Pour in the water and heat the mixture over medium heat. Bring it to a gentle boil while stirring occasionally to prevent sticking.

        Simmer: Reduce the heat to low and let the jam simmer for about 45 minutes. Stir regularly until the mixture thickens and reaches a jam-like consistency.

          Test the Jam: To check if it's ready, drop a spoonful on a cold plate and let it sit for a minute. Drag your finger through it; if it holds its shape, it’s done. If not, continue to cook for additional time.

            Jar the Jam: Once the jam has thickened to your liking, remove it from the heat. Pour it into sterilized glass jars while still hot, filling them to about 1/2 inch from the top.

              Seal and Store: Wipe the rims of the jars to remove any residue, then seal them with lids. Allow the jars to cool at room temperature before transferring to the refrigerator.
