2 cups of broccoli florets

2 cups of baby carrots

2 cups of bell peppers (red, yellow, or orange, sliced)

1 cup of cherry tomatoes

4 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Optional: grated Parmesan cheese, for serving

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup.

      Melt the Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic and thyme, stirring to combine. Allow it to infuse for about 2-3 minutes, keeping an eye to avoid burning the garlic.

        Mix Vegetables: In a large mixing bowl, combine the broccoli, baby carrots, bell peppers, and cherry tomatoes. Drizzle with olive oil, salt, and black pepper. Toss until the veggies are evenly coated.
