3 cups cooked jasmine rice (preferably chilled)

2 tablespoons vegetable oil

2 large eggs, beaten

1 cup frozen peas and carrots (thawed)

3 green onions, sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Prep the Shrimp: Pat the shrimp dry with paper towels. Season with salt and pepper. Set aside.
