Ingredients

1 lb boneless, skinless chicken thighs or breasts

1 cup teriyaki sauce (store-bought or homemade)

2 cups cooked jasmine rice (or brown rice)

1 cup broccoli florets (fresh or frozen)

1 cup carrots, sliced (fresh or frozen)

1 tablespoon vegetable oil

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions

Prepare the Chicken: Cut the chicken into bite-sized pieces. Season lightly with salt and pepper.

Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and sauté until browned and cooked through, about 5-7 minutes. Stir in half of the teriyaki sauce and cook for an additional 1-2 minutes, ensuring the chicken is well-coated.

Add Vegetables: If using fresh broccoli and carrots, add them to the skillet with the chicken. If using frozen, add them now as well. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Add More Sauce: Pour in the remaining teriyaki sauce, stirring to coat the chicken and veggies evenly. Cook for an additional minute to heat everything through.

Assemble the Bowls: In serving bowls, spoon a generous serving of jasmine rice. Top with the teriyaki chicken and vegetable mixture.

Garnish: Sprinkle sesame seeds and sliced green onions over the top for added flavor and presentation.

Serve: Enjoy your quick and flavorful teriyaki chicken bowls immediately while hot!
