1 lb ground beef or turkey

1 medium onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 cup ketchup

1/4 cup brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon mustard powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) canned diced tomatoes, undrained

8 ounces egg noodles (or pasta of your choice)

2 cups shredded cheddar cheese (divided)

1 cup corn (frozen or canned)

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

      Add Vegetables: Stir in the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are tender.

        Mix the Sauce: Reduce the heat to low and add in the ketchup, brown sugar, Worcestershire sauce, mustard powder, smoked paprika, salt, and pepper. Mix well and heat until bubbly, about 3 minutes. Stir in the canned diced tomatoes (with juices) and corn, combining them thoroughly. Remove from heat.

          Cook the Pasta: Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.

            Combine Ingredients: In a large mixing bowl, combine the cooked noodles and the Sloppy Joe mixture. Stir until everything is well mixed.

              Layer in Casserole Dish: Transfer half of the noodle mixture to a greased 9x13 casserole dish. Sprinkle 1 cup of cheddar cheese evenly over this layer. Top with the remaining noodle mixture, then finish with the remaining cup of cheddar cheese.

                Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.
