Ingredients

4 bone-in pork chops (1-inch thick)

2 large apples (preferably Granny Smith or Honeycrisp), cored and sliced

1 medium onion, thinly sliced

1/2 cup pure maple syrup

1/4 cup apple cider vinegar

1/4 cup chicken broth

2 cloves garlic, minced

1 tsp ground cinnamon

1/2 tsp ground nutmeg

Salt and pepper to taste

2 tbsp olive oil

Fresh thyme leaves for garnish (optional)

Instructions

Sear the Pork Chops: In a large skillet or frying pan, heat olive oil over medium-high heat. Season the pork chops with salt and pepper and sear them on both sides until golden brown, about 3-4 minutes per side. This step adds a beautiful color and depth of flavor to the pork. Transfer the seared pork chops to the slow cooker.

Prepare the Apple Mixture: In the same skillet, add sliced onions and cook until they are translucent, about 5 minutes. Add the garlic and cook for an additional minute until fragrant. Stir in sliced apples, maple syrup, apple cider vinegar, chicken broth, ground cinnamon, and nutmeg. Bring the mixture to a gentle simmer, stirring occasionally.

Combine in the Slow Cooker: Pour the apple mixture over the pork chops in the slow cooker. Make sure the chops are well-coated with the sauce and surrounded by the apple slices. If needed, adjust seasoning with additional salt and pepper.

Slow Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork chops are tender and cooked through.

Serve: Once cooked, carefully remove the pork chops from the slow cooker and place them on a serving platter. Spoon the apple and onion mixture over the top and garnish with fresh thyme leaves if desired.

Enjoy: Serve with your favorite sides such as mashed potatoes or a simple green salad. Enjoy this sweet and savory dish that brings comfort to any meal!
