2 pounds beef chuck roast

1 cup balsamic vinegar

1/2 cup beef broth

4 cloves garlic, minced

1 large onion, sliced

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sear the Beef: Heat the olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the beef to the slow cooker.

    Prepare the Sauce: In a bowl, combine the balsamic vinegar, beef broth, minced garlic, sliced onion, brown sugar, Worcestershire sauce, Dijon mustard, thyme, and rosemary. Mix well.
