Slow Cooker Beef and Mushroom Gravy

2 lbs beef chuck roast, trimmed and cut into 1.5-inch cubes

8 oz mushrooms, sliced (button or cremini varieties work well)

1 large onion, diced

4 cloves garlic, minced

1 cup beef broth

1 cup red wine (optional, or use more beef broth)

3 tbsp soy sauce

1 tbsp Worcestershire sauce

2 tbsp tomato paste

2 tsp dried thyme

1 tsp paprika

1/2 tsp black pepper

Salt to taste

2 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef (Optional): Heat a large skillet over medium-high heat. Add a drizzle of oil and sear the beef cubes in batches until browned on all sides (about 2-3 minutes per side). This step adds depth of flavor but can be skipped if short on time.

    Combine Ingredients: In the slow cooker, add the seared beef (if searing), mushrooms, diced onion, and minced garlic. Pour in beef broth and red wine (if using). Stir in soy sauce, Worcestershire sauce, tomato paste, thyme, paprika, black pepper, and salt.

      Cook on Low: Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shreds.

        Thicken the Gravy: About 30 minutes before serving, mix the cornstarch and water in a bowl until smooth. Stir this mixture into the slow cooker and allow it to thicken for the remaining cooking time.

          Serve: Once the cooking time is up, taste the gravy and adjust seasoning if necessary. Serve the beef and mushroom gravy over mashed potatoes, rice, or egg noodles. Garnish with fresh parsley before serving.
