2 pounds beef chuck, cut into 1-inch cubes

4 cups beef broth

3 medium carrots, peeled and sliced

3 medium potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

2 cups green beans, trimmed and cut into bite-sized pieces

1 tablespoon tomato paste

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon olive oil

2 tablespoons all-purpose flour (optional for thickening)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef cubes in batches to avoid overcrowding and sear them on all sides until browned (about 4-5 minutes). Transfer to the slow cooker.

    Prepare the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and slightly softened. Transfer to the slow cooker.

      Combine Ingredients: Add the carrots, potatoes, green beans, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper to the slow cooker. Stir everything gently to combine.

        Cook: Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, or until the beef is tender and the vegetables are cooked through.

          Thicken the Stew (optional): If you desire a thicker stew, mix the flour with a small amount of water to create a slurry and stir it into the stew during the last 30 minutes of cooking.

            Serve: Once done, taste and adjust seasoning if needed. Ladle the stew into bowls, garnish with fresh chopped parsley, and serve warm with crusty bread or over rice.
