Slow Cooker Beef Stroganoff

2 pounds beef chuck, cut into 1-inch pieces

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper to taste

3 tablespoons cornstarch

1/4 cup cold water

1 cup sour cream

Fresh parsley, chopped (for garnish)

Egg noodles or rice (for serving)

Instructions
 

Sauté the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef chunks in batches, browning them on all sides. Transfer browned beef to the slow cooker.

    Sauté the Vegetables: In the same skillet, add chopped onion and sliced mushrooms. Sauté for about 5 minutes until softened. Stir in minced garlic for the last minute of cooking.

      Combine Everything: Transfer the sautéed onion and mushrooms to the slow cooker with the beef. Pour in the beef broth, Worcestershire sauce, Dijon mustard, thyme, paprika, and season with salt and pepper. Stir to combine.

        Slow Cook: Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.

          Thicken the Sauce: About 30 minutes before serving, mix cornstarch with cold water in a small bowl until smooth. Stir the mixture into the slow cooker to thicken the sauce. Let it cook for 30 more minutes uncovered.

            Add the Cream: Gently stir in the sour cream until combined. Allow the stroganoff to heat through for about 10 minutes.

              Serve: Ladle the beef stroganoff over cooked egg noodles or rice. Garnish with fresh parsley for a pop of color and flavor. Enjoy your hearty meal!
